Summer Days Smoothie

Hello family and friends!

I hope y'all are doing well. It's been some time since I added my last recipe (just over a year). Life has been busy, but healthy recipes have still been on my mind. This smoothie recipe is one of my go-to's, since it's an easy way to pack in some fruits and veggies for the day. Plus, my husband likes it too so we'll often enjoy this smoothie together.


While trying to decide on the name for this smoothie, my husband was working on his music album titled, Summer Days. I had some other smoothie name ideas, but none of them seemed quite right. Then it clicked, this is the perfect Summer Days Smoothie! Thanks hubby, for the name inspiration and always encouraging me to pursue my passions.

Prep Time: 5 minutes

Blend Time: 1 minute

Servings: 2 smoothies


Ingredients

  • 2 cups, fresh spinach

  • 1 banana, sliced and frozen

  • 1/2 a peach, sliced and frozen

  • 5 strawberries, frozen

  • 2 cups of cold water

  • ¼ teaspoon pure vanilla extract

  • pinch of salt

Directions

  1. Add spinach to blender, followed by frozen fruit.

  2. Next, add water, vanilla and salt.

  3. Blend on lowest speed for about 15 seconds then increase the speed to medium/high and blend for about 45 seconds or until all of the fruit and spinach have blended together.

  4. Pour into 2 glasses and enjoy with your favorite person!

While this recipe was made with summer in mind, you can easily swap out the fruit with your favorite combinations or with whatever fruits are in season. One thing to keep in mind is this smoothie is more like a juice consistency compared to the typical thicker smoothies. However, if you'd prefer a thicker smoothie, feel free to add more fruit and less water.
