Peanut Butter Protein Bars

Protein bars are a great way to refuel after a workout, or simply great for a nice afternoon snack. While protein bars are high in protein, many store bought bars also tend to be high in sugar and other not so fun added ingredients. Plus, they have that powdery protein taste! Sooo, I set out to make my own version. These Peanut Butter Protein bars are packed with 12 grams of plant-based protein and subtly sweetened with date syrup. After I tried these, I was like WOW these have 12 grams of protein?? They don't even taste like protein bars :D Enjoy!


Prep time: 15 minutes

Bake time: 12 minutes

Servings: 5 bars, approximately 12 grams of protein per bar



  • 1 cup oat flour

  • 1/4 cup hemp seeds

  • 3 T. powdered peanut butter

  • 2 T. coconut flakes (unsweetened)

  • 1/8 t. salt


  • 1/3 cup peanut butter

  • 3 T. date syrup

  • 1/4 cup oat milk


  • 1 T. mini chocolate chips


  1. Combine dry ingredients in a small mixing bowl and set aside.

  2. Next mix the wet ingredients in a medium size bowl. Then add the dry ingredients to the wet and stir until combined.

  3. Line a bread pan with parchment paper, then empty batter into lined pan. Spread batter with a spoon to evenly spread it as much as possible (batter will be very thick). Then cover batter with wax or parchment paper and use the bottom of a measuring cup to flatten mixture.

  4. Sprinkle chocolate chips on top and then press them down into batter.

  5. Bake at 350 degrees Fahrenheit for 12 minutes.

  6. Then let bars cool completely in pan.

  7. Lastly, remove protein loaf the from pan and place on a cutting board. Slice into bars!

Note: I found these bars taste even better the next day after their flavors had time to blend.
