Chocolate Chip Granola Bars
Remember those granola bars you'd eat as a kid? Well, it's time to bring them back-- but in a healthier form! These no-bake chewy Chocolate Chip Granola Bars are super easy to make and healthier than most of the one's you'll find on the shelf at a grocery store. Plus, they can be made in the safety of your own home! You just need a blender and a handful of ingredients.

Blend time: about 2 minutes
Servings: 16 bars
1 cup rolled oats
1 cup deglet noor dates, pitted
1/3 cup walnuts, raw
1/3 cup cashews, raw
2 T. oat milk (or milk of choice)
1/4 t. vanilla extract
1/8 t. salt
1 T. mini chocolate chips
Blend oats, dates, walnuts, cashews, vanilla and salt on low speed. Stop to stir with spatula about every 20 seconds or when the mixture is stuck.
Once the mixture is blended well, add the oat milk (or milk of choice) and blend for about 20 seconds.
Spread batter in a parchment lined bread pan (use enough parchment to fold over mixture).
Fold parchment over batter so the measuring cup doesn't stick, using the bottom of a measuring cup, flatten mixture until evenly distributed in the bread pan.
Next, sprinkle chocolate chips on top and gently press into mixture.
Refrigerate for an hour so bars become firmer.
Lastly, place bar loaf on a cutting board and cut into 16 bars.
Enjoy! And keep any leftovers refrigerated.
