Brownie Bars

With the extra time inside lately, I've been spending more time baking! And I'm excited to share with y'all my latest creation, Brownie Bars! These no bake Brownie Bars are filled with chocolate and peanut butter goodness without any refined sugar and taste absolutely amazing! They're sweetend with dates and a little honey. You only need 5 ingredients, a blender and about 10 minutes to make these bars. Enjoy! :)

Prep time: 5 minutes

Blend time: 1 minute

Servings: 16 bars

Ingredients:

  • 4 oz. Baker's unsweetened chocolate bar, 100% cacao

  • 8 oz. package of pitted dates

  • 1 cup Peanut Butter

  • 5 T. oatmilk (or milk of choice)

  • 1 T. honey

Directions:

  1. Melt the chocolate following the directions on the box.

  2. Next blend dates on low speed for about 30 seconds.

  3. Add melted chocolate to blender, then blend for about 10 seconds on low speed.

  4. Scrape sides of blender with a spatula.

  5. Add peanut butter, honey and oatmilk to blender.

  6. Blend for about 10 seconds on low speed, stop and stir with spatula, then blend for 10 more seconds.

  7. Line an 8"x8" baking pan with parchment paper.

  8. Empty blender contents into parchment lined pan using the spatula.

  9. Evenly spread mixture into pan, then flatten mixture down using a rolling pin or flat surface (like the bottom of a measuring cup).

  10. Flip pan over onto a cutting board, remove parchment paper, then cut into 16 bars.

  11. Store brownie bars in a tupperware, separating the layers with parchment paper so they don't stick together, then refrigerate.

  12. After about 3 hours they'll be ready to eat!

  13. Keep leftovers refrigerated.
