Peanut Butter Cookies

P E A N U T B U T T E R. What a wonderful creation! It's amazing by the spoonful, as a dip for fruit, a topping on toast, swirled in smoothies and hidden in baked goodies. These cookies make it possible to enjoy peanut butter on-the-go, without the mess! They're the perfect snack to keep your energy up between meals or give you a boost of energy before your workout. And in case you were wondering, there is no gluten or dairy!

Peanut Butter Cookies

Prep time: 10 minutes

Bake time: 8 minutes

Servings: 12 cookies


  • 1/2 cup peanut butter (creamy)

  • 1/4 cup applesauce

  • 1/4 cup coconut sugar or date sugar*

  • 1 t. vanilla

  • 1/3 cup oat flour**

  • 1/4 t. cinnamon

  • 1/4 t. baking soda

  • 1/8 t. salt

Toppings (optional):

  • chocolate chunks

  • slivered almonds


  1. Preheat oven to 350 degrees F.

  2. In a medium or large mixing bowl combine the peanut butter, applesauce, sugar and vanilla.

  3. Next stir in the oat flour, cinnamon, baking soda, and salt.

  4. Line a cookie sheet with parchment paper.

  5. Take heaping tablespoonfuls of batter and shape into round balls and then flatten into circles on the baking sheet, repeat until you have 12 cookies.

  6. If desired, add the optional toppings & gently press them into batter.

  7. Place baking sheet in oven and bake for 8 minutes.

  8. Remove baking sheet from oven and let cookies cool for 10 minutes.

  9. Enjoy with your milk of choice!


*Date sugar is found at some grocery stores or health food stores. If it's not at your local grocery store, you can also order it online.

**Oat flour can be bought or it can easily be made by blending old fashioned oats in a blender (approximately 1 ¼ cup oats= 1 cup oat flour).
