Tahini Thyme Cashew Dressing
Whether you want to add more veggies to your diet or looking to dress your veggies up, this recipe will do the trick! This Tahini Thyme Cashew dressing is very creamy with a subtle flavor resemblance to the classic Caesar dressing. This dressing pairs perfectly with roasted veggies or raw veggies. I enjoy this dressing drizzled over my Buddha bowls or as a dip coupled with chopped veggies. This dressing is so flavorful, you'll likely forget you're even eating vegetables, once they're covered in this Tahini Thyme Cashew dressing. It's also very easy to make! The longest part of this recipe is the hour required for the cashews to soak, but the actual time spent in the kitchen is easily less than 10 minutes. Enjoy! :)
Prep time: 10 minutes
Cook time: 60 minutes (time for cashews to soak)
Servings: 7 (1/4 cup portions)
1 cup raw cashews, soaked
1/4 cup lemon juice
1 t. minced garlic (approximately 3 cloves)
2/3 cup plain, unsweetened almond milk
2 T. tahini
1/2 cup nutritional yeast
1/2 t. thyme
1/4 t. salt
Add the raw cashews to a bowl and pour boiling water over them until they're completely covered. Let the cashews soak for 1 hour.
While the cashews are soaking, squeeze 1/4 cup of lemon juice and mince the garlic cloves.
Once the cashews have soaked for an hour, drain the water they were soaking in and then add the cashews to a blender.
Add the remaining ingredients to the blender: lemon juice, minced garlic, almond milk, tahini, nutritional yeast, thyme, and salt.
Blend on the puree setting, until all the ingredients are blended together.

Notes: I like to refrigerate the dressing for a few hours first, this allows the flavors to blend together and the consistency will thicken.
