Lemon Bars

How would I describe these bars? Well... Amazing, Lemony, Healthy, Delicious, Simple, Amazing, Sweet, Easy, Chewy & Amazing. =D These lemon bars only require 10 ingredients and can be made in 10 minutes! They don't require any baking, just a couple minutes of blending. So if you find yourself with 10 minutes to spare or craving a sweet treat, try this recipe!

Lemon Bars


For the Bar:

  • 1- 8 oz. package of dates, make sure there aren't any pits

  • 3 T. almond flour

  • 1 T. coconut flour

  • 2 & 1/2 T. of lemon juice (1 juicy lemon)

  • 3 T. shredded coconut

  • 2 T. chopped walnuts

  • 1 T. raw honey

  • 1 T. coconut oil

  • 1/2 t. lemon granules***


  • 1 t. coconut flour

  • 1 t. almond flour

  • 1/8 t. lemon granules

  • 1 t. raw oats

Lemon Bar Steps


  1. Add dates and lemon juice to blender. Pulse for 30 seconds on the lowest speed.

  2. And remainder of the ingredients (except topping).

  3. Pulse a few seconds, stop, stir contents. Repeat this step several times, until ingredients are combined.

  4. Lay sheet of parchment paper on counter. Empty blender contents unto paper, and form a long lumpy log shape.

  5. Then fold parchment over dough and use a bread pan to flatten dough. Uncover dough and use a knife to straighten the edges, or leave it how it is if you like the rugged edge look. =)

  6. Next, mix the first 3 topping ingredients in a small bowl. Use a sifter to evenly spread half the topping on top of bars then flip the dough over and sprinkle the remaining on other side of dough. Sprinkle the oats over the bars. Cover dough with parchment paper and gently press hands down over dough so the topping sticks to the bars.

  7. Slice bars.

  8. Enjoy!

***Notes: I used True Lemon crystallized lemon granules. They can be found on the baking aisle at the grocery store.
