Pickled Cucumbers

Have you ever taken the last pickle from the jar and:

a) wondered what to do with the leftover juice

b) felt sad that all the pickles were gone

c) ate the last pickle then threw the jar and juice out without thinking twice about it

Well, if you chose A, I have a solution for you. If you chose B, I can turn that sadness around. And if you chose C, I think I can convince you to save that juice! ;)

I discovered a super quick & easy method to pickle cucumbers. All you need are some baby cucumbers and some empty pickle jars (that still have the pickling juice-- just no pickles).

This recipe literally takes less than 5 minutes to prepare and you'll have pickled cucumbers in 5 days!

Ingredients:

-10 baby cucumbers

-2 pickle jars, no pickles just the leftover pickling juice (The jars I used were 768 mL & 710 mL***)

Notes: If your jar is smaller or larger, no worries, just reduce or increase the amount of cucumbers.

Directions:

1) Slice baby cucumbers.

2) Fill jars with sliced cucumbers (don't overfill, make sure cucumbers are completely submerged in pickling juice).

3) Refrigerate for 5 days, then enjoy!
