Carrot Cake Salad

Carrot cake in salad form. This salad has all the yummy flavors that are found in carrot cake without the refined ingredients. When I eat this salad, it reminds me SO much of carrot cake. Plus I feel good about eating it, because I know it's made with wholesome ingredients that are fueling my body.

Servings: 8

Ingredients:

  • 2 cups of lightly packed, shredded carrots (about 5 carrots)

  • 1/2 cup of raisins

  • 1/2 cup of shredded coconut

  • 1 cup of diced, fresh pineapple

  • 1/3 cup of chopped walnuts

  • 1/4 teaspoon cinnamon

Directions:

  1. Combine all ingredients in a large bowl. Mix until combined.

  2. Chill for 6 hours in the fridge before serving.

  3. Serve as a side to any meal or enjoy as a snack.

Notes: The carrot cake salad can be eaten right away, but I it tastes best once it has chilled and the flavors blend.
