Carrot Cake Salad
Carrot cake in salad form. This salad has all the yummy flavors that are found in carrot cake without the refined ingredients. When I eat this salad, it reminds me SO much of carrot cake. Plus I feel good about eating it, because I know it's made with wholesome ingredients that are fueling my body.
Prep Time: 15 minutes
2 cups of lightly packed, shredded carrots (about 5 carrots)
1/2 cup of raisins
1/2 cup of shredded coconut
1 cup of diced, fresh pineapple
1/3 cup of chopped walnuts
1/4 teaspoon cinnamon
Combine all ingredients in a large bowl. Mix until combined.
Chill for 6 hours in the fridge before serving.
Serve as a side to any meal or enjoy as a snack.
Notes: The carrot cake salad can be eaten right away, but I it tastes best once it has chilled and the flavors blend.
