Chocolate Date Night Bars
Craving some chocolate? or just something sweet? But trying to eat healthy? These bars will do just the trick! They're made with dates, nuts, coconut , cacao, vanilla, cinnamon, & just a tad bit of honey. They'll satisfy your sweet tooth along with providing your body with healthy nutrients (fiber, protein, iron, magnesium & potassium). This is a sweet treat you can feel good about eating.

Ingredients:
-8 oz. package of dates, or approx 1 & 1/2 cups
-1/2 cup walnuts, rinsed
-1/2 cup almond meal
-1/3 cup cashews
-1 cup coconut flakes
-5 T cacao powder
-1 T honey
-1/2 t. cinnamon
-1/4 t. vanilla
Directions:
1. Add all ingredients to a blender and blend. Stop, stir, blend & repeat until the mixture begins to stick together.
2. Pour into a parchment lined bread pan. Cover with plastic wrap, then using hands press mixture down into pan. A small glass cup can be used like a rolling pin to evenly spread mixture in pan.
3. Flip bread pan unto a cutting board and slice into bars.
Makes: 7 bars
Notes: Keep these bars refrigerated for a longer shelf life. Also, it may be quicker to blend in a food processor if you have one handy. It worked fine in my blender, I did have to stop and stir the mixture several times though.
