Hearty Breakfast Muffins

My dad loves these muffins! It's hard not to once you've tried them. These muffins are not only delicious, but healthy and filling too. They're great for breakfast because they have all 6 food groups: fruits, veggies, whole grains, nuts, milk & chocolate chips =D. They do require a bit of prep work, the most laborious part is shredding the carrots and chopping the apples. However, it's also a nice arm workout! And, these muffins are perfect for valentine's day: healthy for your heart and while they're slightly sweetened--they're not too sweet, so you can enjoy your V-day chocolates along with these muffins.

Prep time: 20 minutes

Bake time: 25 minutes

Servings: 24 muffins

Ingredients:

DRY

  • 1 cup oat flour

  • 1 cup flaxseed meal

  • 1 cup oat bran

  • 1/2 cup coconut sugar

  • 1/4 t. salt

  • 1 T. cinnamon

  • 1 T. baking powder

  • 1 t. baking soda

WET

  • 2 cups finely shredded carrots (about 4 long carrots)

  • 2 ⅓ cups finely chopped apples (about 3 small apples)

  • 3/4 cup almond milk

  • 2/3 cup applesauce

  • 1 t. vanilla

ADD ON'S

  • 1/3 cup raisins

  • 1/3 cup mini chocolate chips

  • 1/2 cup walnuts, chopped

Directions:

  1. Mix the dry ingredients in a large bowl.

  2. Combine the wet ingredients in another bowl.

  3. Add the wet mixture to the dry ingredients.

  4. Then add the raisins, chocolate, and nuts to mixture.

  5. Lastly, measure the batter using a 1/3 cup into a lined muffin tin. Use a spoon to press batter into the cups (the batter will be very thick). The batter will almost fill the muffin cup to the top, that's good because the muffins will only slightly rise.

  6. Bake at 350 degrees F for 25 minutes.
