Berry Delicious Oatmeal
This is my FAVORITE oatmeal recipe! It is sweet (with 0 added sugars), all the of the sweetness come naturally from the fruit. And instead of the traditional soupy oatmeal texture, this recipe turns out firmer- closer to a muffin consistency. Not only does this recipe taste yummy, but it's simple to make and can be ready to eat in under 10 minutes!
Prep Time: 5 minutes
Bake Time: 5 minutes
1 ripe banana (covered with freckles)
1/2 cup applesauce
1/2 cup oats
splash of vanilla
1/2 t. cinnamon
1/2 cup frozen berries
Mash the banana. (Hint: If the banana is not super ripe, I find it helpful to gently mash it a little before I peal the banana)
Stir in the applesauce, oats, vanilla and cinnamon.
Stir in the berries.
Evenly spread mixture in bowl, so it is completely level.
Microwave for 4 1/2 minutes. Let cool for 5 minutes before eating.
Notes: This recipe keeps well in the fridge and can be saved to eat later, cold or reheated.
