Southwestern Quinoa
Are you looking for a healthy recipe that doesn't require a lot of preparation time? This recipe is easy to make; it only requires peeling some sweet potatoes and a little bit of chopping! Also, the clean-up is simple- one large pot, a knife and a cutting board. :)

Prep Time: 15 minutes
Cook Time: 25 minutes
Servings: 5-6
Ingredients:
3 1/2 cups diced sweet potatoes (about 3 small sweet potatoes)
2/3 cup diced sweet onion (about 1/2 a small onion)
1 1/3 cups diced red bell pepper (about 1 medium red bell pepper)
2 3/4 cups vegetable broth
1 1/3 cups quinoa
1T. cumin
1 t. paprika
1 -16 oz. can of black beans, drained
1 cup of corn
Optional Toppings:
Avocado
Salsa
Directions:
Dice the the sweet potatoes, onion, and bell pepper.
Add the diced sweet potato, onion, bell pepper, vegetable broth, quinoa and spices to a medium/large pot.
Turn stove to high. Stir contents periodically until broth begins to boil.
Let mixture boil for a couple minutes.
Then cover the pot and simmer for 20 minutes.
Lastly stir in the black beans and corn.
Serve with avocado slices and your favorite salsa. Enjoy!
Notes:
Leftovers taste great cold or heated up!
