Southwestern Quinoa

Are you looking for a healthy recipe that doesn't require a lot of preparation time? This recipe is easy to make; it only requires peeling some sweet potatoes and a little bit of chopping! Also, the clean-up is simple- one large pot, a knife and a cutting board. :)

Prep Time: 15 minutes

Cook Time: 25 minutes

Servings: 5-6

Ingredients:

  • 3 1/2 cups diced sweet potatoes (about 3 small sweet potatoes)

  • 2/3 cup diced sweet onion (about 1/2 a small onion)

  • 1 1/3 cups diced red bell pepper (about 1 medium red bell pepper)

  • 2 3/4 cups vegetable broth

  • 1 1/3 cups quinoa

  • 1T. cumin

  • 1 t. paprika

  • 1 -16 oz. can of black beans, drained

  • 1 cup of corn

Optional Toppings:

  • Avocado

  • Salsa

Directions:

  1. Dice the the sweet potatoes, onion, and bell pepper.

  2. Add the diced sweet potato, onion, bell pepper, vegetable broth, quinoa and spices to a medium/large pot.

  3. Turn stove to high. Stir contents periodically until broth begins to boil.

  4. Let mixture boil for a couple minutes.

  5. Then cover the pot and simmer for 20 minutes.

  6. Lastly stir in the black beans and corn.

  7. Serve with avocado slices and your favorite salsa. Enjoy!

Notes:

Leftovers taste great cold or heated up!
