Blueberry Oatmeal

This is my go-to breakfast. It is quick, simple, healthy and yummy. During the week I don't have much time to prepare breakfast. I usually roll out of bed with just enough time to get ready for work. I try to always eat something in the morning though. Otherwise, I'll end up snacking too much during the day or will be starving until lunch time. But with this recipe only taking 2 minutes, it easily fits into my morning routine. It's also easy to keep the ingredients in stock.

The ingredients for blueberry oatmeal


1/2 cup old fashioned oats

3/4 cup water

1/2 cup frozen blueberries

1 T flax meal

1/8 t cinnamon

1/8 t vanilla

almond milk to taste (i use 1/2 cup)


1. Mix oats and water in microwavable bowl. Microwave 1 1/2 minutes.

2. Add the blueberries, flax meal, cinnamon, and vanilla. Stir everything together. The frozen blueberries defrost almost completely once everything is stirred together, and they also help bring the temperature of the oatmeal down!

3. Lastly, add almond milk.

***Notes: I'll also add nuts or almond/peanut butter for extra protein
